It's fair to say that quality ingredients shouldn't detract from nutritional value. And when food is processed, this is exactly what happens. The terms “quality ingredients” and “processed foods” don't go hand in hand, and for good reason. If you have the responsibility of director of ingredient sourcing or a similar function in your organization, it can be overwhelming to search through numerous potential suppliers for safe, high-quality ingredients.
The quality of all the inputs in your products must be checked. Never assume that the ingredients you buy today are as good as they were a month or a year ago. Ensure that your inputs maintain the same handling characteristics and generate consistent quality in the final product. If a supplier starts to lose quality, start looking for a new source that maintains better standards.
